Important recipe notes!!

  • The best chicken for buffalo dip is rotisserie chicken as it’s already seasoned, tender, and easy to shred. A standard rotisserie chicken provides about 3 cups of shredded meat, which is exactly what this recipe requires.
  • Always use block cream cheese instead of the spreadable kind. This isn’t just a preference; it affects the texture. Tub cream cheese has more water and stabilizers that change how it melts and binds. Block cream cheese creates a dense and creamy base that holds the dip together.
  • Always choose full-fat cream cheese. Reduced-fat options have more moisture and don’t melt as smoothly. If you’re looking for a lighter dip, focus on other areas to reduce calories rather than the cream cheese.
  • Buffalo sauce and hot sauce are not the same thing. Hot sauce is thin and very vinegary; it’s meant to be used as a condiment. It adds heat but lacks body and depth of flavor. On the other hand, buffalo sauce, is hot sauce mixed with butter and seasoning. It’s thicker, richer, and offers that signature tangy-buttery flavor that defines buffalo dishes. This is the one you want.
  • When it comes to ranch or blue cheese dressing, both can work in buffalo chicken dip; the final choice depends on your flavor preference. Ranch dressing provides a cool, herby base that balances the heat of the buffalo sauce without clashing. It’s the more crowd-pleasing choice if you’re serving a mixed group. Blue cheese dressing is bolder and tangier. If you enjoy the classic wings-and-blue-cheese combo, this is for you. It pairs nicely with crumbled blue cheese on top before baking.
