You can stuff it into a buttery croissant for lunch, scoop it onto crackers for a quick snack, or pile it over crisp lettuce for a light dinner. This chicken salad recipe works every time. It takes about 15 minutes to prepare, uses ingredients you probably already have, and tastes much better than anything from a deli counter.

One of the great things I love about a good chicken salad recipe is how far it can go. Make it once, and you’ll have lunches ready for three days. It is perfect for picnics and potlucks. You can easily make more for a crowd. Once you know the base recipe well, the options are endless. You can try a classic Southern version with sweet pickle relish, a lighter Greek yogurt alternative, or a French twist with tarragon.

No special equipment or complicated techniques. Just simple ingredients you probably already have in your pantry.

What Makes a Great Chicken Salad?

Every great chicken salad hits five key elements at the same time: protein, fat, acid, crunch, and freshness. If you take away any one of these, you’ll notice something’s missing, even if you can’t pinpoint what it is.

The protein is your chicken, serving as the base for everything else. The fat comes from your dressing, which is mostly mayo-based. It coats each piece of chicken and spreads the flavor throughout the dish. The acid, whether it’s lemon juice, a bit of mustard, or a splash of vinegar, prevents the salad from feeling heavy and one-note.

Crunch usually comes from celery, which does more work than many realize. It breaks up the soft, creamy texture and adds life to each bite. Freshness, through fresh herbs, a bit of raw onion, or a squeeze of lemon at the end, is the final touch that elevates everything.

How To Make Classic Chicken Salad

  • 2 rotisserie chicken breast ( shredded )
  • 1/4 cup finely diced celery
  • 1/4 cup finely diced white or red onion
  • 1/2 cup of mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon of Dijon mustard
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • ¼ teaspoon of black pepper
  • ¼ cup blanched slivered almonds ( optional )

1. I am using leftover chicken breast from a rotisserie that I had. If you don’t, make your own by roasting chicken breast and season with salt and pepper and allow it to cool before shredding it.

2. On a board, am going to chop up the chicken breast pieces, I like my chicken salad to have some texture, not too chunky but a little chew. So chop it in medium pieces.

3. Once you’ve cut the chicken pieces, transfer it to a bowl.

4. Add in a quarter cup of diced white onion or red onion.

5. Next, add in a quarter cup of chopped celery ( about 1 rib worth of celery )

6. Add in Dijon mustard and lemon juice.

7. Season with salt and black pepper.

8. Add in about 2 tablespoon of mayonnaise at time. You don’t want to add all the mayonnaise all at once, do it bit by bit.

9. Next, add in the toasted slivered almonds and stir to combine.

10. Taste and adjust for seasoning, if chicken salad feels dry, add in more mayonnaise and Dijon mustard as you stir.

11. The chicken should taste well seasoned, and not dry at all.

12. Serve and enjoy. I like my chicken salad on a sandwich.

  • The type of chicken you choose for your chicken salad matters. Breast meat gives you a cleaner, leaner bite that absorbs the dressing well, while thigh meat adds more flavor and stays noticeably moist, especially if you make the salad ahead of time. Either option works, but a combination of both is the best choice.
  • Full-fat mayonnaise is essential here. Reduced-fat versions have more water, leading to a wetter and thinner salad than it should be. They also tend to taste slightly sweet, which doesn’t match the savory profile of the salad.
  • Don’t leave our Dijon mustard and don’t substitute with yellow mustard. Dijon serves two purposes. First, it helps bind the lemon juice and mayo into a creamy dressing instead of letting them separate. Second, it provides a clean, sharp heat; not spicy, but brightness that enhances the overall flavor without being overwhelming.
  • Lemon juice is the acid that keeps this dish from feeling heavy. It works with the mustard. Both cut through the richness of the mayo. Mustard adds depth, while lemon adds brightness. It’s the top note that makes the whole salad taste fresher than it should.
  • Don’t skip the celery or reduce the amount. It plays a critical role in texture. Chicken salad without celery ends up as a smooth, uniform paste. Celery gives you something to bite into, creating a rhythm of texture that makes each bite more interesting than the last.
  • Onions adds a sharp, savory bite that plain chicken and mayo need. Raw red onion are more pungent than white or yellow onion, which is exactly what you want; you want it to stand out as a flavor, not fade into the background. If raw onion is too strong for your taste: soak the minced onion in ice-cold water for 10 minutes, then drain and pat it dry. This pulls out a significant amount of the harsh compounds that make raw onion sharp, leaving a flavor that’s much milder and more pleasant. It takes almost no extra effort and really makes a difference.
