Here’s the thing: the restaurants are not doing anything mysterious. They do a few specific things right. That’s what this recipe gives you. The real thing. Crispy, golden, shatteringly crunchy breading that stays crispy even under the sauce and cheese. Tender, juicy chicken that’s perfectly cooked all the way through. How To Make Chicken Parmesan
- 4 chicken breast ( skinless and boneless )
- Spaghetti pasta or whichever pasta shape you prefer
- 1 cup panko bread crumbs, or more as needed
- 2 large eggs
- ½ cup store-bought tomato sauce ( I used Rao’s Homemade Marinara Sauce )
- ½ cup freshly grated provolone cheese
- ¾ cup freshly grated Parmesan cheese
- ½ cup olive oil for frying
- salt and freshly ground black pepper to taste
- 2 tablespoons all-purpose flour, or more if needed
- ¼ cup fresh mozzarella, cut into small cubes
- ¼ cup chopped fresh basil
- 2 teaspoons olive oil

1. For this recipe, start by warming up your marinara sauce on the stove. I used store-bought marinara (Rao’s Marinara Sauce); you can also use homemade.

2. While the marinara sauce heats up, prep the spaghetti pasta. In a large pot of boiling water, add a generous amount of salt. Then add in your pasta and cook it according to the package instructions. I like mine al dente with a bit of chew, so I cook it for about 7 minutes.

3. Now for the chicken. We’re using chicken breasts, and we will butterfly them since they can be quite thick. We want them as flat as possible.

4. Once the chicken is sliced, place the chicken breast between two sheets of wax paper. Use a rolling pin to pound the chicken with firm, even strokes from the center outward. The goal is to flatten the chicken to a uniform thickness. This way, it will cook evenly and be more tender.
5. Next, set up the breading station. You need three shallow bowls: one for the flour, one for the egg wash mixture, and one for the Parmesan and breadcrumb mixture.

6. Season the flour with half a teaspoon of garlic powder, a pinch of salt, and a few grinds of black pepper. Whisk everything together briefly to ensure it is well combined.

7. To make the egg wash, crack two eggs into a dish. Add a tablespoon of milk or water and whisk until fully mixed.

8. For the breadcrumb mixture, combine the Italian breadcrumbs, panko, ¼ cup of Parmesan, dried oregano, red pepper flakes (if using), and garlic powder. Mix thoroughly so everything is evenly distributed.

9. Before you start breading, season the chicken breasts with salt and pepper ensuring both sides are well seasoned.

9. To bread each cutlet, start by dredging it in the seasoned flour. Make sure both sides are well coated, then lift the cutlet and shake off the excess firmly. You want a thin, even layer of flour, not a thick caking.

10. Next, dip it in the egg wash. Make sure both sides are fully coated, then hold the cutlet up and let the excess drip off. Too much egg wash makes the coating thick and heavy.

11. Then press it into the breadcrumb mixture. Lay the cutlet flat, press down firmly with your palm, then flip and press again. Make sure to press both sides so the breadcrumbs stick to the egg wash.

12. Place each breaded cutlet on a wire rack set over a baking sheet. Once all chicken cutlets are breaded, slide the rack into the refrigerator for about 10 to 30 minutes if you have the time. This rest helps the coating stick together, creating a nice crust.

13. After 30 minutes, it’s time to start frying. Pour ¼ inch of neutral oil into a large, heavy-bottomed skillet. Heat it over medium-high heat until the oil reaches 350°F. To test if the oil is ready, add a pinch of breadcrumbs; they should sizzle immediately and turn golden.

14. When frying the cutlets, place them in the pan away from you. Do not overcrowd the pan. Cook each cutlet for about two minutes on each side. Resist the urge to keep touching the cutlet; leave it undisturbed for two minutes to achieve a golden, crispy crust.

15. Once each side is done, flip and cook for another 2 to 3 minutes until golden all over.
16. Repeat until all cutlets are fried. Transfer the fried cutlets to a wire rack. Do not stack them or put them on paper towels, as these trap steam against the bottom of the crust and soften it.

17. Once you’re done frying, it’s time to finish in the oven. In a baking dish, place your chicken cutlets.

17. To prevent soggy chicken parm, start with some basil and a generous serving of mozzarella cheese, then spoon some of that warm marinara onto the center of each cutlet.

18. Top the marinara sauce with provolone cheese, mozzarella, and finish with a generous sprinkle of Parmesan cheese.

19. When you’re done, slide the baking dish into the preheated 450°F oven. Bake for 8 to 10 minutes until the cheese is fully melted.

20. Pull the pan from the oven and let the cutlets rest on the rack for 3 minutes before serving.

21. While the chicken rests, it’s time to plate the pasta we made earlier. Toss it with some of that warm marinara sauce.

22. To serve, use a spatula to carefully transfer each cutlet to the plate of pasta. Garnish with fresh basil and enjoy.

Important recipe notes!!
- Pat your chicken completely.
Thoroughly dry the chicken with paper towels before you do anything else. Any moisture on the chicken will turn to steam in the hot oil. This softens the breading from the inside out before it gets a chance to set. Dry chicken is essential for a crispy crust. - Salt the chicken ahead of time.
Salting in advance pulls a small amount of moisture to the surface. This moisture dissolves and then gets reabsorbed back into the meat, seasoning it throughout instead of just on the surface. The result is chicken that tastes seasoned all the way through, not just on the crust. If you have time, a quick 30-minute rest after salting makes a difference. If you can, do it overnight in the refrigerator, uncovered. - Let the chicken come to room temperature before frying.
Cold chicken straight from the refrigerator works against you. It drops the oil temperature sharply when it hits the pan. As a result, the crust starts absorbing oil instead of crisping. It creates uneven cooking, where the outside is done long before the cold center has time to catch up. Take your chicken out of the fridge about 15–20 minutes before you plan to fry. - Season every single layer.
This is one of the most important and often overlooked principles in breaded cooking.. Each layer of your breading station; the flour, the egg wash, and the breadcrumb mixture should be seasoned on its own. Add a pinch of salt and garlic powder to the flour. Whisk in a tiny pinch of salt into the egg wash. Season the breadcrumb mixture boldly with oregano, garlic powder, red pepper flakes, salt, pepper, and Parmesan. When every layer is flavorful, the finished crust has a depth and complexity that no amount of sauce can match. - Between batches, let the oil return to temperature before adding the next round.
Two to three minutes will do. Dropping cold chicken into oil that has cooled leads to greasy, pale, under-crisped crust.
