How To Make Classic Chicken Salad

Creamy, tangy, and full of crunch, this chicken salad disappears from the bowl faster than you can make it. Stuff it into a buttery croissant for lunch, scoop it onto crackers for a quick snack, or pile it over crisp lettuce for a light dinner. This chicken salad recipe works every time. It takes about 15 minutes to prepare, uses ingredients you probably already have, and tastes much better than anything from a deli counter.

Ingredients
  

  • 2 Leftover rotisserie chicken breasts
  • ¼ cup diced celery
  • ¼ cup diced white or red onion
  • ½ cup mayonnaise
  • 1 tbsp  lemon juice
  • 1 tbsp Dijon mustard
  • ½ tsp  garlic powder
  • salt to taste
  • ¼ tsp black pepper
  • ¼ cup blanched slivered almonds ( optional )

Method
 

  1. On a board, am going to chop up the chicken breast pieces
  2. Transfer it to a bowl.
  3. Add in a quarter cup of diced white onion 
  4. Add in a quarter cup of chopped celery
  5. Add in Dijon mustard and lemon juice
  6. Season with salt and black pepper
  7. Add in about 2 tablespoon of mayonnaise at time
  8. Next, add in the toasted slivered almonds and stir to combine
  9. Taste and adjust for seasoning
  10. If chicken salad feels dry, add in more mayonnaise and stir.
  11. Allow chicken to sit in fridge as flavors develop, the longer the better, overnight is best
  12. Serve and enjoy over bread for lunch!!
