How To Make Chicken Parmesan

Crispy, golden, shatteringly crunchy breading that stays crispy even under the sauce and cheese. Tender, juicy chicken that’s perfectly cooked all the way through. A rich marinara that complements without overwhelming. And that molten, slightly caramelized cheese on top that makes chicken parmesan one of the most satisfying dishes you can serve at dinner.

Ingredients
  

  • 4 chicken breast ( skinless and boneless )
  • Spaghetti pasta
  • 1 cup panko bread crumbs
  • 2 large eggs
  • ½ cup tomato sauce ( I used Rao’s Homemade Marinara Sauce )
  • ½ cup grated provolone cheese
  • ¾ cup grated Parmesan cheese
  • ½ cup neutral oil for frying
  • salt and black pepper to taste
  • 2 tbsp all-purpose flour
  • ¼ cup fresh mozzarella
  • chopped fresh basil
  • 2 tsp olive oil

Method
 

  1. Start by heating up your marinara sauce on the stove
  2. While the marinara sauce heats up, prep the spaghetti pasta
  3. In a large pot of boiling water, add a generous amount of salt
  4. Once it comes to a rolling boil, add in your pasta and cook it according to the package instructions
  5. Once pasta is done, remove from heat, drain and set aside.
  6. Now for the chicken. Butterfly the chicken breasts into even pieces, as flat as possible
  7. Once the chicken is sliced, place the chicken breast between two sheets of wax paper.
  8. Use a rolling pin to pound the chicken with firm, even strokes from the center outward. 
  9. Set up the breading station with shallow bowls for the flour, egg wash mixture, and Parmesan and breadcrumb mixture.
  10. Season the flour with garlic powder, salt, and black pepper. Mix
  11. To make the egg wash, crack two eggs into a dish. Add a tablespoon of milk or water and whisk until fully mixed.
  12. For the breadcrumb mixture, combine the Italian breadcrumbs, panko, ¼ cup of Parmesan, dried oregano, red pepper flakes, and garlic powder. Mix 
  13. Before you start breading, season both sides the chicken breasts with salt and pepper
  14. To bread each cutlet, start by dredging both sides in the seasoned flour.
  15. Next, dip it in the egg wash. Make sure both sides are fully coated
  16. Lastly, into the breadcrumb mixture press it into it firmly
  17. Make sure to press both sides so the breadcrumbs stick to the egg wash
  18. Place each breaded cutlet on a wire rack set over a baking sheet
  19. Once all chicken cutlets are breaded, slide the rack into the refrigerator for about 10 to 30 minutes
  20. After 30 minutes, it’s time to start frying. Pour ¼ inch of neutral oil into a large, heavy-bottomed skillet.  
  21. Heat it over medium-high heat
  22. Fry each cutlet into the oil, place them in the pan away from you
  23. Cook each cutlet for about two minutes on each side.
  24. Once each side is done, flip and cook for another 2 to 3 minutes until golden
  25. Repeat until all cutlets are fried
  26. Transfer the fried cutlets to a wire rack
  27. In a baking dish, place your chicken cutlets on a single layer
  28. To prevent soggy chicken parm, start with some basil and a generous serving of mozzarella chees
  29. Spoon some of that warm marinara onto the center of each cutlet
  30. Top the marinara sauce with provolone cheese, mozzarella, and finish with a generous sprinkle of Parmesan cheese.
  31. When you’re done, slide the baking dish into the preheated 450°F oven
  32. Bake for 8 to 10 minutes until the cheese is fully melted.
  33. Pull the pan from the oven and let the cutlets rest on the rack for 3 minutes before serving
  34. While the chicken rests, it’s time to plate the pasta we made earlier
  35. Toss it with some of that warm marinara sauce.
  36. To serve, use a spatula to transfer each cutlet to the plate of pasta
  37. Garnish with fresh basil and enjoy.
