How to Make Stuffed Bell Peppers

These stuffed bell peppers are one of the easiest ways to get dinner on the table. With one pan, you get tender roasted peppers, a flavorful filling, and a melty cheese top, all baked together with minimal fuss

Ingredients
  

  • 6 whole bell peppers ( assorted colors )
  • 1 lbs  lean ground beef
  • 1 whole white onion
  • 3 cloves of garlic
  • 15 oz can diced tomatoes
  • 1 cup cooked white rice
  • 1 cup frozen corn
  • 1 tbsp Worcestershire sauce
  • salt and pepper to taste
  • cup shredded pepper jack cheese

Method
 

  1. Preheat oven to 350 degrees Fahrenheit and grease your 9×13 pan
  2. slice off the tops of the bell peppers and remove the seeds from the inside
  3. To a large skillet, add your ground beef over medium high heat and stir so it doesn’t burn
  4.  Add in diced onions and sauté until the ground beef is browned for 5 - 7 minutes
  5. Add in minced garlic and sauté for about 1 minute
  6. Once ground beef is browned, remove this from the heat and pour in the a can of drained diced tomatoes.
  7. Add in leftover cooked white rice and frozen corn
  8. Add 1 tablespoon of Worcestershire sauce, salt, and cracked black pepper.
  9. Finish with a cup of shredded pepper jack cheese. Mix all together.
  10. Next place the bell peppers on a greased 9×13 pan.
  11. Take spoonful of the rice and meat stuffing and stuff each bell pepper full
  12.  Sprinkle more pepper jack cheese right on top of each bell pepper
  13. Before baking, add a splash of water to the baking dish to help the peppers steam better.
  14. Bake in the oven for about 30 minutes
  15. Once timer is up, the bell peppers will be softened and ready to eat!
  16. Allow to cool
  17. Serve and enjoy!!
