How to make Easter egg cheesecake

If you want an Easter dessert that looks fancy but feels easy, this is the one. This Easter egg cheesecake is a creamy, no-bake cheesecake filling tucked into chocolate Easter eggs. Each bite has smooth, tangy cheesecake and a little chocolate crunch. These are perfect for Easter brunch, spring parties, and dessert tables.

Ingredients
  

For the Easter egg
  • 1 Large hollow chocolate egg (halves work best)
For the biscuit base
  • 60 g (2.1 oz) Graham cracker
  • 25 g (0.8 oz) Butter (melted)
For the cheesecake
  • 235 g (8.2 oz) Full fat cream cheese (softened)
  • 40 g (1.4 oz) Powdered sugar
  • 1 tsp Vanilla extract ( for flavor)
  • 95 ml (3.3 oz) Heavy cream
To decorate get creative with;
  • Caramel sauce, Mini eggs, Kit Kat bunnies, Chocolate balls, Fondant mini carrots, Jelly beans, Chocolate curls, Pastel sprinkles

Method
 

  1. Carefully split the hollow eggs into halves if they are not already separated. We want them hollow and intact.
  2. Place them cut side up in an egg carton, muffin tin, or foil rings so they stay steady.
  3. Make the cheese cream filling beat softened cream cheese until smooth.
  4. Add in your powdered sugar, vanilla, and a slight pinch of salt, then mix until creamy with no lumps.
  5. If using heavy cream, whip it to stiff peaks in a separate bowl
  6. Fold the whipped cream [or whipped topping] into the cream cheese mixture until combined. Keep it gentle so the filling stays airy
  7. To assemble, fill one half of the eggs with crushed graham crackers,
  8. Spoon or pipe the cream cheese filling into each chocolate egg half
  9. Smooth over the tops with a spoon or small spatula.
  10. Refrigerate for at least 2 to 4 hours, or until the filling feels firm to the touch.
  11. Fill a pipping bag with the remaining cream cheese and pipe some of the cream cheese on top of the easter egg.
  12. Play around with different nozzles with each egg
  13. Top with cookie crumbs or white chocolate shavings for a nest look, add your mini eggs.
  14. Finish with sprinkles or a white chocolate drizzle. Serve chilled.
