High Protein Cottage Cheese Egg Bites

Cottage cheese egg bites are one of the best meal prep breakfasts you can make. They are fast, filling, and easy to customize. I love having these on hand because to me, they’re the perfect high-protein breakfast for busy mornings.

Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheese
  • ½ cup diced veggies ( i used spinach and bell peppers).
  • Salt and pepper to taste
  • garlic or onion powder (optional)

Method
 

  1. Start by preheating your oven to 350°F.
  2. Grease a standard muffin tin very well, or use silicone liners for easier release.
  3. Set the muffin tin on a sheet pan before filling, this makes it easier to move without spills.
  4. To your blender, add eggs, cottage cheese, salt, black pepper, or any optional seasonings (garlic powder, onion powder, paprika, herbs)
  5. Blend just until everything is mixed and the mixture is smooth and creamy. DO NOT OVER MIX
  6. Add your mix-ins to each of the muffin cups ( I used chopped spinach, diced red peppers, and feta cheese
  7. Pour the blended egg and cottage cheese mixture over the mix-ins. Fill each cup about 3/4 full.
  8. Tap the pan gently on the counter to settle the mixture and remove air bubbles.
  9. Sprinkle a small amount of cheese on top.
  10. Add about 3-cups of hot water to the baking sheet to provide steam as the egg bites bake for that starbucks-like silky texture
  11. Transfer to oven and Bake for 20- 25 minutes until the tops look set and the centers no longer jiggle and edges look golden
  12. Pull from oven and allow to rest for at least 10-minutes. The egg bites come out very puffy but will shrink as they cool and settle
  13. Place egg bites on a rack or plate to cool completely.
  14. Serve and enjoy

Notes

  • Cook any meat fully before adding it to the egg bites ( bacon, sausage, ham or chicken), Drain the excess oil after cooking and cool.
  • Sauté watery vegetables like mushrooms, spinach, or zucchini first as they tend to release a lot of water which can make your egg bites watery.
  • A water bath adds gentle steam around the muffin tin, which helps the egg bites cook more evenly. The texture comes out creamier and more custardy, which is the closest oven method to that Starbucks style bite. You get an egg bites that’s incredibly creamy and custardy
