Easy Stuffed Shells with Ricotta

Creamy spinach stuffed shells packed with ricotta, mozzarella, and tender spinach, baked in rich marinara until golden and bubbly. Easy, make-ahead, and freezer-friendly. Perfect for weeknights and feeding a crowd.

Ingredients
  

  • 14 oz jumbo pasta shells
  • 2 cups ricotta cheese
  • 9 oz ricotta cheese
  • 2 oz grated parmesan cheese
  • 7 oz baby mozzarella balls
  • 28 oz tomato sauce
  • salt and pepper to taste
  • ¼ tsp freshly ground nutmeg
  • 1 cup mozzarella
For spinach
  • 9 oz fresh baby spinach
  • 1 small onion ( diced)
  • 3 garlic cloves ( minced )
  • ½ tsp neutral oil

Method
 

Cook down the spinach
  1. Over medium high heat, add a skillet and some oil
  2. Add in your onions and sauté for about 2 - 4 minutes
  3. Add in your minced garlic and cook until fragrant
  4. Add in your fresh spinach and stir to combine. Cook until leaves wilted
  5. Season with a pinch of salt. This also helps draw out water from the spinach
  6. Remove from heat and sieve the excess liquid from the spinach.
  7. Set aside
Cook the noodles
  1. Bring a large pot of well-salted water to a boil. 
  2. Cook your jumbo shells for about 9 minutes, two to three minutes less than the package directions. 
  3. Remove from heat, drain and stop the cooking process with cold water or spread them out on a baking sheet
  4. Set aside
Assemble
  1. In a large bowl, combine the ricotta, squeezed spinach, half the mozzarella, all the Parmesan, the egg, and your herbs and seasoning. 
  2. Stir everything together until it’s well mixed and smooth.
  3. Taste and adjust for seasoning accordingly.
  4. Spread a generous layer of marinara sauce across the bottom of a baking dish
  5. Spoon the filling into each shell generously with a spoon or a piping bag
  6. Nestle each stuffed shell into the baking dish, open side up.
  7. Pour the remaining marinara evenly over the top of all the shells.
Bake
  1. Cover the dish tightly with foil and bake at 350°F (180°C) for 25 minutes.
  2. Remove the foil and bake for another 15 minutes until the cheese is melted, golden, and starting to bubble at the edges.
  3. Pull the dish out of the oven and let it sit for 5 to 10 minutes before serving.
  4. Serve and enjoy
