3 Ingredient Peanut Butter Cookies (Easy, Chewy, and Gluten-Free)

These 3 ingredient peanut butter cookies are naturally gluten-free, ready in 20 minutes, and need no flour or mixer. The easiest cookie recipe you'll ever make.

Ingredients
  

  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 egg

Method
 

  1. Set your oven to 180°C (350°F). Line your baking sheet with parchment paper or lightly grease it.
  2. In a bowl, add the peanut butter, and sugar and combine.
  3. Add in eggs and vanilla extract to your mixing bowl. Stir until everything is fully combined. The dough will come together quickly usually in about a minute. It will feel stiffer and denser than regular cookie dough. That’s normal. Don’t add liquid to loosen it.
  4. Using a cookie scoop and scoop about 1 tablespoon of dough.
  5. Place it on your prepared baking sheet. Repeat until all the dough is used, spacing the balls about 2 inches apart. 
  6. Use a fork to press each dough ball down gently, creating the classic crosshatch pattern.
  7. Slide the baking sheet into your preheated oven and bake for 10 to 12 minutes.
  8. Leave the cookies on the baking sheet for at least 5 minutes before moving them.
  9. After 5 minutes, carefully transfer them to a wire cooling rack and let them cool completely.
