  • 6 large eggs

  • 1 cup cottage cheese

  • ½ cup shredded cheese

  • ½ cup diced veggies ( i used spinach and bell peppers).

  • Salt and pepper
  • Simple seasoning such as garlic or onion powder (optional)

1) Preheat the oven and prep the pan

  • Start by preheating your oven to 350°F.

  • Place a rack in the center of the oven.

  • Grease a standard muffin tin very well, or use silicone liners for easier release.

  • Set the muffin tin on a sheet pan before filling, this makes it easier to move without spills.
