How To Make Cottage Cheese Pancakes

  • 1 ½ cups cottage cheese
  • 1 cup all purpose flour (or oat flour)
  • 2 large eggs
  • 1 tsp vanilla extract

  • 1 tsp. baking powder

4. Then, add vanilla extract.

5. Also, add salt and baking powder to the blender. Blend on medium-high for 20 to 30 seconds. The mixture should be completely smooth and creamy without any lumps. You want everything mixed well, but do not over-blend at this stage.

6. Pour the batter into a bowl and let it sit at room temperature for 5 minutes. This allows the baking powder to activate and the flour to fully absorb the moisture.

7. Place a non-stick skillet over medium-low heat. Add a small piece of butter or a light drizzle of neutral oil. Let the pan heat for 2 to 3 minutes.

8. Using a ¼ cup measure, pour individual portions of batter onto the pan. Leave at least 2 inches of space between each pancake since they will spread slightly.

9. Cook the first side for 2½ to 3 minutes without touching or pressing down.
